Banana Cottage Cheese Pancake

Banana-sweetened cottage cheese pancakes with chocolate chips. They are very delicious and high in protein, which will keep you full all morning!

It's strange because I was never a big lover of pancakes until a few years ago. My parents rarely made them, which may have contributed to this. We were more of a biscuits and gravy kind household.

That being said, my love of pancakes grew after I discovered protein pancakes. Since then, I've experimented with numerous varieties, and I just decided to try cooking pancakes using cottage cheese as a protein source!

Fair warning: these are dense pancakes. I enjoy the texture and believe they are more filling, but if you prefer light and fluffy pancakes, try these Greek yogurt pancakes or my coconut flour pancakes.

Blend the ingredients. Blend the oats, bananas, cottage cheese, egg whites, almond milk, cinnamon, and baking powder until creamy. Stir in the chocolate chips.

Cook - Pour the batter onto a hot, greased skillet and cook until it forms small bubbles on top. When you can easily slide a spatula under the pancake,

it's ready to flip. Flip and heat for another 2-3 minutes, or until the pancake is cooked through.

Top and serve - Add banana slices, maple syrup, and any other desired toppings.
