You can prepare these potatoes up to step 3. Transfer the potato mixture to the prepared baking dish and allow to cool fully.   

Wrap in aluminum foil and chill for up to 24 hours. To finish the potatoes, cover the dish with foil and bake at 425°F  

Remove the foil, sprinkle with the remaining 1 cup cheese, and bake uncovered for another 20 minutes
