Mediterranean Meals: From Fish Stew to Lamb Shish Kebabs  

Though the Mediterranean Sea is surrounded by more than 20 countries in Africa, Asia, and Europe, there are some flavors  

Fresh tomatoes, olives, fish, lemon, feta, mint, za'atar, and other ingredients are used to prepare delicious dishes  

This collection of Mediterranean dishes features traditional Mediterranean cuisine as well as variations on the region's iconic flavors.  

This entrée inspired by a classic Greek salad features kamut, an ancient wheat variety, for a robust chew.  

Soak kamut overnight to speed up the cooking process, or cook it ahead of time to reduce day-of prep time to 30 minutes.  

"It's almost impossible to end up with dry, overcooked fish when cooking it whole," says chef Steve Corry.   

"The bones protect against extreme heat, plus they add flavor and moisture." Corry pan-roasts whole branzino, or Mediterranean sea bass, which is simply packed with lemon and rosemary.  

He makes the simple compound butter, which melts on the fish to form a sauce, with wild Tunisian mountain capers, although any caper would suffice.
